Savouri Anari Cheese
Ingredients
- Phyllo pastry sheets
- Fresh mint
- Strawberry syrup
- Oil for frying
- Cinnamon
- Anari cheese, cut in 2 cm slices
Method:
1. Cut the anari cheese into consistent slices with a wet knife
2. On two phyllo pastry sheets, three times the size of the anari slices, place the anari, a mint leaf and sprinkle some cinnamon powder.
3. Fold into an envelope and wet the edges with water to seal.
4. Fry the envelopes in hot oil and then place on kitchen paper to absorb the excess oil.
5. They can also be baked in the oven if we brush the envelopes with oil or melted butter.
6. Bake at 180 degrees Celsius.
7. Serve with strawberry syrup or any other syrup of your choice.
Unsalted Anari or Halloumi Cheese with Orange sauce
Ingredients:
- 4 thick slices of anari or halloumi cheese
- 100gr sugar
- 15gr butter
- 1 cup fresh orange juice
- Juice of 1 lemon
- Chopped walnuts
Method:
1. In a non-stick pan, place the sugar with the butter until the mixture browns, then stir in the orange and lemon juices.
2. Cook the sauce until it’s slightly thickened.
3. Serve the anari or halloumi cheese with the orange sauce. You can sprinkle the cheese with walnuts and serve it with ice cream.

Anari Cheese with Chia Seeds
Ingredients
- Fresh unsalted anari soaked in lukewarm water
- 1 tbsp chia seeds
- Oats
- Fresh or dried fruits
- Cinnamon
Method:
- Soak the anari cheese in lukewarm water until soft, then mash with a fork.
2. Mix with the remaining ingredients and serve.
This can be served as a healthy and nutritious breakfast.

Halloumi Cheese
with Seasame seeds
Ingredients
- 4 slices of halloumi cut into 2 cm sticks
- Flour
- Milk
- Egg
- Aromatic spices or herbs
- Oil for frying
- 2 burger rolls
Method:
1. Coat the halloumi slices with flour and then in the mixture of egg, milk and paprika or mint or cinnamon.
2. Then coat in the sesame seeds. Press them to coat well.
3. Place in the refrigerator for 1 hour, then deep fry.
4. Serve with honey or syrup from spoon sweets.
Other options are to cut the halloumi into cubes or thread them onto souvlaki sticks in between dry fruits to be served with cocktails or as finger food.

Pumpkin Soup with Halloumi
Ingredients
- 500gr red pumpkin
- 50gr sugar
- 40gr salt
- 1 onion
- 50gr butter or olive oil
- 2-3ltr water
- 1 vegetable stock cube
- 300gr fresh cream or yogurt
- 300gr halloumi cut into cubes
- Paprika
- Salt & pepper to taste
Method:
1. Cut the pumpkin into cubes.
2. Sprinkle the pumpkin with the sugar and salt and leave it to release its juices.
3. Otherwise it can be placed in a hot oven for 25 minutes.
4. In a saucepan, lightly fry the chopped onion, then add the pumpkin until lightly browned.
5. Add the water and stock cube and cook until the pumpkin cubes have softened and the water has reduced by half.
6. Puree in a blender, place again on the heat adding the fresh cream or yogurt, salt, pepper and paprika
7. In a separate container soften the halloumi by pouring hot water over it.
8. Serve the soup with the halloumi cubes and a few drops of olive oil as garnish.

Tortilla with Anari Cheese
Ingredients
- 1 tortilla 26cm
- Strawberry or forest fruit jam
- Halloumi or anari thinly sliced or cut into sticks
- 1 dried fig
- A few rocket leaves
- Peanut butter
- Little olive oil
Method:
1. Spread the jam in the centre of the tortilla.
2. Add the halloumi or anari, the dried fig cut into small pieces and rocket leaves with the oil.
3. Fold in two edges and then roll the tortilla sticking the end with some more jam.
4. It can be served as finger food by rolling in cling film, refrigerating and then cut into bite-sized pieces.

Grilled Vegetables with Halloumi in a Burger
Ingredients
- 2 slices of red pepper
- 2 slices of green pepper
- 2 slices of aubergine
- 2 slices of tomato
- 2 slices of halloumi with chilli or paprika
- Olive oil
- 2 bread buns
Method:
1. Coat the vegetable slices (except the tomato) with olive oil and grill or cook in the oven. Then grill the halloumi.
2. Place the halloumi in the buns, add the cooked vegetables and tomato slices. Secure with bamboo skewers.
3. Serve with BBQ sauce
